Gluten Free Sugar Cookies
Prep Time: 35 Minutes

Ingredients
- 360g Cassava Flour (order here)
- 1 Cup Butter
- 1 Cup Sugar
- 1 tsp Vanilla Essence
- 1 Egg
- 2 tsps Baking Powder
- ½ tsp Salt
Method
- In a bowl, cream butter and sugar with a mixer until smooth (at least 3 minutes).
- Beat in vanilla and egg.
- In a separate bowl, combine baking powder, salt, and flour.
- Add dry ingredients to the wet ingredients a little at a time. The dough will be very stiff. If it becomes too stiff for your mixer, turn out the dough onto a countertop surface.
- Wet your hands and finish off kneading the dough by hand (DO NOT CHILL THE DOUGH).
- Divide into workable batches, roll out onto a floured surface, and cut (You want these cookies to be on the thicker side, roughly 7-8mm thick).
- Bake at 180°C for 6-8 minutes.
- Let cookies cool on the sheet until firm enough to transfer to a cooling rack.
