Gluten Free Sugar Cookies

Ingredients

  • 360g Cassava Flour (order here)
  • 1 Cup Butter
  • 1 Cup Sugar
  • 1 tsp Vanilla Essence
  • 1 Egg
  • 2 tsps Baking Powder
  • ½ tsp Salt

Method

  1. In a bowl, cream butter and sugar with a mixer until smooth (at least 3 minutes).
  2. Beat in vanilla and egg.
  3. In a separate bowl, combine baking powder, salt, and flour.
  4. Add dry ingredients to the wet ingredients a little at a time. The dough will be very stiff. If it becomes too stiff for your mixer, turn out the dough onto a countertop surface.
  5. Wet your hands and finish off kneading the dough by hand (DO NOT CHILL THE DOUGH).
  6. Divide into workable batches, roll out onto a floured surface, and cut (You want these cookies to be on the thicker side, roughly 7-8mm thick).
  7. Bake at 180°C for 6-8 minutes.
  8. Let cookies cool on the sheet until firm enough to transfer to a cooling rack.
